Many home cooks avoid poaching eggs because the technique seems intimidating. We feel it is our duty not to gatekeep the sacred knowledge of how to poach an egg, because in reality, it’s surprisingly simple.
Fill a saucepan with several inches of water and bring it to a gentle simmer. You want small bubbles rising from the bottom, not a rolling boil. Water that boils too aggressively can break apart the egg whites.
Crack one egg into a small ramekin or bowl. This step gives you better control and allows the egg to enter the water smoothly.
Lower the bowl close to the water’s surface and gently slide the egg into the simmering water. Avoid dropping it from a height.
Some cooks create a gentle swirl in the water before adding the egg, but with fresh eggs and steady heat, you can achieve excellent results without spinning the water.
Poach the egg for about 3 to 4 minutes for a runny yolk or 4 to 5 minutes for a firmer centre. The whites should become opaque and fully set while the yolk stays soft.
Lift the egg with a slotted spoon and place it briefly on a paper towel to remove excess water before serving.
