Why OEB Rebuilt Its Pancake Batter for Club Summer

Some menu features start with a flavour. The Berries & Cream Cloud Stack started with a question:

What would it take to create a lighter, airier pancake than anything OEB had made before?

For OEB’s culinary team, the answer wasn’t a new topping or garnish. It meant going back to the foundation of the dish itself and rebuilding the pancake batter from the ground up.

Starting from scratch

Rather than modifying an existing recipe, OEB’s culinary team developed an entirely new batter designed specifically for the Berries & Cream Cloud Stack.

The breakthrough came through the incorporation of folded whipped egg whites, a technique more commonly associated with delicate cakes and soufflés than traditional pancakes. By carefully folding whipped egg whites into the batter, the team was able to create the signature lift and cloud-like texture that ultimately inspired the dish’s name.

The result is a pancake with noticeably more height, more air, and a lighter texture than anything OEB has offered before.

Creating the texture was only part of the process. Because the batter relies on air trapped within the whipped egg whites, maintaining that texture throughout service requires a different approach to preparation.

To preserve the intended guest experience, the batter is prepared in small batches and remade every two hours throughout service. This helps maintain the volume, consistency, and cloud-like texture that define the dish from the first order of the day to the last.

Inspired by classic berry desserts

Once the pancake itself was perfected, attention turned to what would accompany it. The inspiration came from classic berry desserts and layered cream-filled cakes, where fruit, cream, and soft textures come together to create something both indulgent and balanced.

The finished dish layers cloud-like pancakes with vanilla mascarpone, chantilly cream, warm triple berry compote, and maple butter. Each element was chosen to complement the light texture of the pancakes while adding richness, freshness, and contrast.

The Berries & Cream Cloud Stack may only be available as part of Club Summer, but the development behind it reflects the same philosophy that guides every menu decision at OEB: every dish must earn its place on the menu.

In this case, that meant rethinking one of brunch’s most familiar dishes, rebuilding it from the batter up, and creating an experience that feels distinctly different from anything OEB has offered before.

The result is OEB’s lightest, fluffiest pancake yet—and a perfect example of how small details can make a familiar dish feel entirely new.
