When OEB launched Club Summer in 2025, the concept was intentionally simple: create a seasonal beverage program that captured the energy of summer and gave guests something new to look forward to.
This year, Club Summer is back — and it has evolved into something bigger.
Available now through September 7, Club Summer has expanded beyond beverages to include OEB’s first-ever seasonal brunch features, creating a complete summer dining experience built around the same philosophy that has guided the brand since opening its first location in 2009: Every dish must earn its place on the menu.
That standard shaped every decision behind this year’s lineup.
Expanding club summer beyond the glass
For OEB’s culinary team, introducing seasonal features means more than creating something guests haven’t seen before. Every feature must reflect the same ingredient standards, attention to detail, and culinary creativity that define the year-round menu.
The result is two distinctly different features that showcase both innovation and craftsmanship.
maple chili pork belly benny
The Maple Chili Pork Belly Benny marks the first time OEB has featured pork belly on its menu.
Developed in partnership with long-time Canadian supplier Stemmler’s Meats, the dish features in-house roasted pork belly seasoned using OEB’s proprietary chili spice blend before being finished with a maple glaze. Inspired by the comforting flavours of Southern cuisine, it pairs the pork belly with a house-baked buttermilk biscuit, OEB’s signature brown butter hollandaise, crispy shallots, apple slaw, and a fresh arugula and fennel salad dressed with lemon vinaigrette.

Berries & Cream Cloud Stack
The Berries & Cream Cloud Stack started with a challenge: create a pancake with more height, more air, and a lighter texture than OEB’s previous recipe.
Achieving that goal required the development of an entirely new batter that incorporates folded whipped egg whites to create the cloud-like lift that inspired the dish’s name. To preserve that texture, the batter is prepared in small batches and remade throughout service.
Inspired by classic berry desserts and layered cream-filled cakes, the dish combines cloud-like pancakes with vanilla mascarpone, chantilly cream, warm triple berry compote, and maple butter.

continuing the beverage tradition
While Club Summer has expanded, beverages remain at the heart of the program. This year’s lineup includes three limited-time drinks inspired by the flavours of summer:
- Pineberry Aperol Lemonade
- Coconut Hibiscus Kiss
- Vanilla Oat Cloud Cold Brew
Together, the three beverages continue the beverage-first tradition that launched Club Summer in 2025.
Why Club Summer Continues to Evolve
As OEB has grown, so has the opportunity to create seasonal experiences that showcase the creativity of its culinary team while staying true to the standards guests know and trust. Club Summer creates space to explore new ingredients, techniques, and ideas while maintaining the quality, care, and attention to detail that have defined OEB since day one.
Available through September 7, this year’s lineup is OEB’s most ambitious expression of that philosophy yet.
